Chocolate Cheese Brownie ~巧克力芝士布兰尼

This is a revisit recipe but this time i uses coconut flower sugar to make this brownie. This is a classic brownie for me. It is always my first choice when i wanted to make a cheese brownie.

Coconut flower sugar is a better alternative from table sugar.  Coconut sugar is a sugar produce from the sap of cut flower buds from the coconut palm. The sap from the coconut flower buds i collected then it is boiled over moderate heat to evaporated most of its water content. The final product is coconut sugar, which is caramel coloured and taste similar to brown sugar.

Brownie appeared cooked but it is actually half cook inside.
Scrape the half cook brownie with a spatula.
Pour in the cream cheese mixture, swirl, mix, swirl, mix
Cheese brownie is done!!

This brownie is my boys' favourite too!

Chocolate Cheese Brownie ~巧克力芝士布兰尼
Recipe adapted from Baking Made Easy by Agnes Chang
Makes 1, 20cm x 20cm square cake
Ingredients for the brownies:
180g butter
20g chocolate powder (i use hershey cocoa powder)
150g coconut flower sugar
3 eggs
120g self raising flour

Ingredients for the cheese layer:
250g philadephia cream cheese
60g coconut flower sugar
1 egg
1/4 cup water
1 tsp vanilla extract

To Do:
1) Preheated oven at 170C. Melt butter in a thick bottom sauce pan. Then add in chocolate powder and stir to combine.

2) Add in sugar and stir until sugar dissolves. Beat in eggs, one at a time.

3) Sieved the self raising flour twice before adding in to the mixture. Mix well.

4) Prepare a 20 cmx 20 cmsqaure baking tin. Lined with parchment paper or aluminium foil. Do leave extra parchment paper, over hanging at the sides of the baking tin. Pour the mixture into the prepared baking tin.

5) Bake the brownie for 15 minutes.

6) While the brownie is baking, prepare the cheese layer. Cream the cream cheese and sugar until smooth. Beating in egg and lastly beat in water until is well combine.

7)  Remove the half cook brownie from the oven after baked for 15 minutes

8) Use a spatula to scrap the centre of the brownie. Pour in all the cheese layer mixture on the scrap area and swirl it with a small knite to create the marble effect.

9) Return to oven (170C) and cooked for another 20  to 25 minutes or bake till golden brown. When it is cooked. Cool it before taking out of the baking tin.

*** note: If the cake is too cooked before pouring in cream cheese mixture the marble effect will not be nice.

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
