Ayam Masak Merah ... 香辣红番茄鸡

Ayam Masak Merah is a Malay dish named Malay Red Cook Chicken. 
The red colored comes from the tomato ketchup/puree and chilies. 

I know my kids loves tomato and this dish is cooking with tomato ketchup. Oh!! they will love this tasty, yummy Red Cooked Chicken. One thing i am worrying is that, this dish will be spicy so i decide to cook the kids version by reducing the chillies to the lowest amout, that is 1/2 a chilli.
The result is wonderful..my kids love..love..love this :)

香辣红番茄鸡, 是道吃过就会爱上的一道佳肴. 它的红是来之红番茄/番茄酱和红辣椒的天然色素. 我家宝贝们爱番茄酱, 我想谁家宝贝不爱呢!! 就想煮这道佳肴给他们尝尝. 可是啊!! 又担心辣, 我要香不要辣..就来个宝贝们的不辣而香的红番茄鸡吧!! :D 真的宝贝们爱吃哦!! 开心:D

What do you think of this dish?? Don't you think this red colour is so makes this dish looks so inviting!!

Cooking this is no fuss at all. It is simple or maybe you need to blend the shallots, ginger and chillies.
 First marinate the chicken ( i used 2 large chicken maryland and i chopped into 2) with turmeric powder and salt for half and hour.
 Pre-fried the chicken cutlets/drumsticks.Then saute the blended shallots, ginger and chillies. 
Add in the slices red onion, the spices (cardamon seeds, cinnamon stick and cloves) saute again until fragrant. 
Pour in water, coconut milk, tomato ketchup and puree (i added this for extra tomato yum) stir to combine. 
Add in the chicken and simmer till the gravy reaches the thickness that you like...DONE!!
煮法还蛮简单的. 只需预备好材料, 先把鸡肉用盐和黄姜粉掩上30分钟, 再过热油, 备用.
把红辣椒,姜,红葱头搅脆了, 爆香. 加入香料如丁香, 桂皮和小豆蔻炒香. 把水,(我加了番茄泥)番茄酱和椰酱再放入过了热油的鸡块煮之酱料浓就搞定了.

Here is a little funny thing that happen when we indulge into this dish. My second (Sam) for him, he is love at first sight for this dish. When i was taking pictures of this dish, he is non stop asking me when can i eat and keep telling me he is hungry..(he is crazy over the red ketchup chicken, that what he call it) Once i am done with the shooting he start to taste the gravy. His eye goes blink! blink! he told me 'mum i loveeee this..' He slurpping the gravy and add the gravy to his white rice eating with the chicken non stop and out of certain he stops...his mouth was munching side to side and
 i ask him ' Sam what going on? what happen to your mouth??'
Sam answer 'Mum, i  think i chew on something a bit bitter and look. look ... what is this little black stick??'
We all laugh :D :D :D :D :D 
Do you know why?? He chewed one of  the clove..i only added 2 cloves and he is so lucky he chewed one of them...LOL
 说到吃这道菜还闹了个趣事. 我家二宝贝第一次吃,就爱上了. 吃个不停.
他吃鸡肉又配汁还一直说妈妈我的饭要淋汁. 吃着吃着他突然嘴巴歪过来歪过去,我还以为他呛到!! 原来他咬到一支小小的黑木..哈哈哈..他的小黑木就是丁香..:p
很幸运hor!!我只放两小支小黑木(丁香)就被他咬到..:D

My boys loves this dish, as i am cooking the non spicy but still with the spices aroma kind of Ayam Masak Merah .. :p

Malay Red Cooked Chicken / Ayam masak merah

Recipe source:  from WendyinKK 

(with my notes and modification in green)

850gm chicken parts (6 large drumsticks)

(I used 2 large chicken maryland which is about 550gm i cooked a little more of this recipe)
1 tsp salt 

(i used 1/2 tsp)
½ tsp turmeric powder
Dash of pepper

3 shallots

(i used 2 shallots)
2 cloves of garlic
(i used 2 small cloves)
1 cm ginger

(i used 1/2 cm)
2 red chilli
(i used half a chilli as i am cooking kids version here)

2 inches cinnamon

(i used 1 inches cinnamon)
3 cloves (bunga cengkih)

(i used 2 cloves)
3 cardamoms (buah pelaga)

(i used 3 small ones)
1 red onion sliced



½ cup tomato ketchup
½ cup coconut milk
½ cup water
1/3 tsp salt
1 Tbsp sugar

1 cup canned green peas (I used Ayam brand of which is more pale in colour and has that soft mushy texture)
(i didn't add this)
(My addition 1 Tbsp of tomato puree)
1. Marinate chicken with salt, turmeric and pepper for at least 30 minutes.
2. Mill shallots, ginger, garlic and chilli.

(i used a pestle and mortar to grind the above because mine is a very small portion so i am lazy to use my blend :p)
3. Heat wok and put in ½ cup of oil. Pan fry chicken pieces until the skin turns golden. Dish up. It’s ok if the chicken is not cooked thoroughly and still oozes some blood.
4. Pour away some of the oil, leaving behind about 2-3 Tbsp of oil.
5. Saute the milled ingredients on medium heat until it looks glossy, put in dry spices and sliced onion and continue to sauté until the onions looks translucent and wilts.
6. Put in the rest of the ingredients, except peas. (i didn't add peas) Return chicken into the wok to cook until the gravy reduces to preferred amount.
7. Put in green peas and let it cook for a while. Dish up and serve.

  13. Hi Doreen, i love this kid's version of ayam masak merah :) it is one of my favourite malay dishes but i always find them a bit too spicy for total enjoyment, now i cant wait to try yr version, would love for my son to be able to enjoy this too, thanks for sharing :)

    My son is very sensitive and dramatic with even slight amount of chili added. Your boys are really good eating this dish with 1/2 a chili. Now, drooling at your food... wishing too that my son will try to eat at 1/4 chili... *sign*

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Get ready the filling and the wanton wrappers. This is the parade of my Shark's Fin dumpling ... lol Homemade parchment paper liner. Arrange them neatly into the bamboo steamer. HOT! HOT! From the steamer!! Loaded with filling ..YUM! ENJOY~ Shark Fin Dumpling (yu chi gow) (Scallop dumpling /Cilantro dumpling - depends which filling you using) Recipe adapted from  ‘香港地

Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy. Add in B, one egg at a time and blend well. 2)
